A healthy twist on Caramel deLite Girl Scout cookies

Even if you forgot to celebrate National Girl Scout Day on March 12th, I’m sure we’ve all had our fair share of their delicious cookies. I hate to be the one to tell you this, but these cookies aren’t as innocent as the faces who sell them.

One of my personal favorites is the Caramel deLite – a caramel and toasted coconut-covered cookie. While a serving size may only have 130 calories, these are chock full of ingredients that have no nutritional value.

Instead of risking your health for a treat, enjoy my rendition of a healthy Caramel deLite!
